Fruitcake usually is thought of as some hard as brick loaf with green & red fruits all over it.......well......this isn’t one of those cakes. 

My mom has been making this cake for years now, and it has gotten some adjustments since the first few times making it - it has become one of the tastiest treats that we look forward to each Christmas (and often wonder why we don’t have it more often) because even though she usually makes a double batch - and the sucker looks pretty huge & if you lift it it seems to weigh a bit as well.   Somehow though it dwindles down pretty fast.

This year - I made it for friends - but I know come Christmas day - I’ll be enjoying a big piece of fruitcake (or 2 or 3) because my mom is also planning on making it this year....
