Adding in a bit of Agave for sweetness is all it needs for a healthy & yummy shake!!

Cheers!!

I’ve never actually cooked grapes before - but thought it might be a nice combination with garlic & also with chicken & risotto. It was interesting - when the grapes were cooked - they tasted like the freshest raisins I’ve ever tasted - it was a really nice taste - and totally like Mediterranean flavors along with the chicken & risotto. Something different & yummy too!

Cheers!

Alright - so there not exactly chicken nuggets but whatever. I took chicken strips & coated them in a mixture of rice flakes, garlic, salt, & pepper, & red chili flakes & tossed them in the oven. I figure the chicken is moist & the spices & rice was sticking to them so I’ll see how it turns out.

I’m trying to loose weight. AHHH!!!! I have never ever in my entire life tried to do this. I was never really concerned with weight issues. I was always working out & fit into a size 6 - sometimes 4. These days - I have gained like 30 pounds - no joking. I look like a beached whale!!! It’s crazy. I’ve always loved to eat - but these days I think I could stand to not eat quite as much & not as much fattening foods. So I’m going to try to eat a low fat diet for the most part - skipping cooking with butter & cream & oil & switch to fat free stuff. It’s interesting because when I was younger I would naturally gravitate to low fat foods & then I think when I started really cooking I discovered how fabulous just a little bit of butter finishes a sauce or just a bit more oil makes the whole dish taste beyond delicious. So - whatever - I’m going to try to cook healthy & skip the high fat additions. Okay - enough said - I’ve got the chicken strips baking in the oven & rice already made. I thought some fat free yogurt as a dipping sauce & some lemon would make a lovely little healthy meal. :)

Cheers!!

I added in some water & olive oil & scooped little blobs of dough onto foil & stuck them i the oven. My daughter & I enjoyed yummy warm savory pancakes for our afternoon snack! Delicious!

Cheers!

So I must admit, I now usually make meals by throwing all the ingredients in a foil lined casserole dish & popping it the oven to do its thing. Alas all the big pans were dirty so had to break out a pot & use that for dinner :) Didn’t quite feel like cleaning them up at the moment. So - I decided to take potatoes & peas - it’s a traditional indian dish & one that I don’t have a recipe for, but since I’ve been cooking for awhile now - no recipe needed!! I took some potatoes that I microwaved & peeled them & took a bag of frozen peas & stuck it in a pot. I added a fresh tomato & olive oil & a good amount of salt & pepper & some chili spice. I added a bit of water & let the mixture cook up. I peeked after a bit & squashed the tomatoes up & let it all come together nicely. Turns out this was a delicious dish. My husband is definately a tough critic with food & when he ate it he said he would by my anything I wanted. & he was serious. So yeah - that was a yummy dish. My daughter also ate it up - so that is also a good clue if something is tasty or not so great. Super simple & delicious too!!

Cheers!!
